The Recipe Files: Baked Kale Chips

If one of your new year's resolutions is to lose weight and/or eat healthier (which is one of mine every single year), kale chips can be a great low calorie alternative to potato chips as a side for pizza. They are very simple to make and taste surprisingly much better than they sound.

Ingredients
  • 1 bunch kale
  • 1 tablespoon extra virgin olive oil (evoo)
  • 1 teaspoon seasoned salt or seasoning of your choice (I used Penzeys BBQ 3000)

The Recipe Files: Pepperoni & Marinated Mozz on a Rustic Crust

Back on the good foot after the holiday weekend, I decided to bake a healthy pizza with a wheat crust I had purchased in Giant's organic section a few weeks ago.

Ingredients:
Rustic Crust Organic Great Grains
Rustic Crust Pizza Sauce
Uncured pepperoni
Fresh mozzarella balls marinated in olive oil, herbs and red pepper (got these at Trader Joe's)
Lowfat shredded mozzarella (also from Trader Joe's)

The Recipe Files: Irish Pizza

Happy St. Patty's Day! Although the Irish aren't exactly known for their fine cuisine, I figured I would google Irish pizza and see what came up. Not only are there several pizzerias across the country serving such a thing today, but I also came across a recipe so you can try it at home:

Corned Beef and Cabbage Pizza

Prep Time: 35 minutes
Cook Time: 1 hour
Serves: 2 medium (14-inch) pies
